Okay, can we talk about Kuerigs for a second? While I don’t own one myself & am in fact not a coffee drinker, that doesn’t stop me from wanting to fork over the money to get one. It 99% has to do with my infatuation with kitchen gadgets & about 1% about being realistic in the fact that I would probably use it about 5 times a year to make hot chocolate. Which I’ve been told is totally unreasonable because I would basically be paying $25/cup for a machine to make a drink that I could easily make in 1 minute in the microwave (dang you realistic family members). But nonetheless, that doesn’t stop me from my dreams of one day owning a robotic hot chocolate stirrer to lighten the obvious strain that stirring a 1 cup glass of liquid brings on.
So while I sulk in the sadness of having to stir my hot chocolate by hand (oh the struggles), I’ll bake instead. I made these cookies last week using the same base recipe as my Mint Chocolate Cake Brownie Cookies, but switched out the mint for regular chocolate chips and mini marshmallow bits. When I found a huge bag of these bits at a Amish country store for $1, I swooped them right up and figured I would come up with a purpose for them later on.
Like the last recipe, these cookies are made using a boxed brownie mix and one cup of a chocolate cake mix. The cake mix gives the cookies the thickness I was after, while still keeping with a cakey, yet chewy texture. Which makes them sturdy enough to hold in cute paper straws for the popsicle sticks!
Immediately after removing from the oven, I carefully pressed in the marshmallow bits and inserted a half a paper straw into the sides of each cookie (being careful not to poke through the top or bottom). I let them cool on the cookie sheet for about 20 minutes before lifting them off, which gave them enough time to cool down and set around the straw.

Ingredients
- 1 20.5 oz box dry Brownie Mix
- 1 cup chocolate cake mix powder
- 1/2 cup all-purpose flour
- 3 Tablespoons butter softened
- 3 eggs
- 2 teaspoons water
- 4 tablespoons plain greek yogurt
- 1/2 cup mini semi-sweet chocolate chips
- 1/4 cup mini vanilla marshmallow bits
- Paper Straws

Instructions

In a large mixing bowl, mix together brownie mix, cake mix, and flour. On medium speed, slowly add in the butter and eggs and mix until incorporated. Mixture will be stiff. Keep mixer on medium speed, and slowly add in water and greek yogurt and mix until combined.

Stir in mini chocolate chips and stir until evenly disbursed.

Using a 1-tablespoon cookie scoop, scoop dough by the tablespoon and place dough balls on a parchment-covered baking sheet. Bake at 350 degrees for 11 minutes.

Immediately after removing from the oven, place pan on wire rack and lightly press in mini marshmallow bits. Do not remove cookies from pan.

Allow for the cookies to continue to bake on hot baking sheet for 5-10 minutes until removing cookies from the baking sheet.
